泰式塔香鸡肉沙拉

Ingredients:
2 u: W% x/ _2 v- W1/2 Chicken Breast Fillets,200g (1/2 边鸡胸肉) 3 t0 Q" f7 x9 @/ o7 V3 }
1 Teaspoon Light Soy Sauce (1 小匙酱油)
8 i& a2 d  E& [! e5 A1/2 Tablespoon Cooking Wine (1/2 汤匙花雕酒) 5 U4 ]( D0 c5 \" Y: O# r. J
1 Teaspoon Cornstarch(1 小匙玉米粉)
+ D3 _  P" t2 QSome Pepper(少许胡椒粉)
% h8 z6 X. H2 P  j$ r, y7 x2 Tablespoon Sweet Potato Flour (2 汤匙地瓜粉)
9 d" R( C7 Y% U5 ]( R1 Tablespoon Cornstarch (1 汤匙玉米粉) 1 u/ p+ ~- C% B% J7 S

Methods:
( @" W# @0 p8 {& j, \+ SWash and cut chicken fillet into 2cm wide strips then marinate with Soy Sauce, Cooking Wine, Cornfstarch and Pepper for at least 30 minutes or more.
) K$ h; H- A% _" c( V" t将鸡胸肉洗净, 切2cm 宽条状, 然后加入酱油, 花雕酒, 玉米粉和胡椒粉调味至少30 分钟以上. 8 b+ h# Q5 l* x3 k3 D/ k6 _
Coat the marinated chicken with the flour mixture(sweet potato flour + cornstarch) and set aside for 5 minutes before deep-frying. - x  s9 K4 `$ b6 T; z
将腌好的鸡肉条沾混合好的地瓜粉和玉米粉, 然后放在一边等5分钟后才炸.( 这能防止粉从鸡肉上滑落)
+ h( X# }* _8 R* b9 B, hHeat up half pot of oil and deep-fry the chicken strips in two batches until golden brown, drain and set side.

1 I6 N& w4 s5 uChilli Sauce:
# ]5 O3 Q6 `7 ^7 r4 D' H4 D2 Cloves Garlic, grated (2 颗蒜, 切末) # T/ }) r6 }. V1 G; G* ?
2 Small chilli, finely chopped (2 颗小辣椒, 切末)
: c! e* j* D! W( z7 z. t8 Thai Basil Leaves, finely chopped (8 叶九层塔, 切末)
0 K- w! ?' \( n! H9 z+ M1 Teaspoon Chopped Spring Onion(1 小匙葱花) ( X& O# m, n/ {0 N! o
2 Tablespoons Thai Sweet Chilli Sauce (2 汤匙泰式甜辣椒酱) & r8 }7 U4 g& R3 K, z: _
1.5 Tablespoon Lemon Juice (1.5 汤匙柠檬汁)
8 a2 l. @, H  f6 S1 Tablespoon Thai Fish Sauce (1 汤匙鱼露)
' S6 X1 }( E& u4 Q: q' @* i+ ~$ [1/2 Teaspoon Sugar (1 /2 小匙糖)
' ]! p1 C" }  c& \( U5 o# H" r4 B1 Tablespoon Drinking Water (1 汤匙食水)

6 B; Q+ I) ^$ d0 p8 |3 m1 ~) i1 ~Mix all the sauce ingredients together in a small bowl and set aside for later used. ( d( A9 i  r1 R& h! p' p! _0 w' k, E
把全部酱料的材料放在一个小碗里搅拌均匀, 待用.( 如果您不会吃太辣, 就不要放小辣椒或只放一颗)

1 Red Apple, shredded (1 个萍果, 切丝)
" e$ i' z  a: M1 l4 C) A( @1 Japanese Cucumber, shredded (1 条日本小黄瓜, 切丝) ' V. I  }/ R0 H( N3 J
1 Small Carrot, shredded (1条小胡萝卜, 切丝) ( n* V9 c* f' Y# }
6 Cherry Tomato, halves (6颗小番茄, 切半) + x$ i1 G/ j7 ?- T+ t4 O0 M1 P
6 Lychee, remove seeds (6颗荔枝, 拨壳, 去种子) $ K. t" D4 A0 d; b6 R% x

Methods:
- ]! j% b, q# U9 y+ p& gMix all the above ingredients in a mixing bowl then set aside in the fridge until serve.
8 O3 ?" J' d$ x4 \1 L把全部的沙拉材料放在一个碗里搅拌均匀, 放进冰箱待用.
+ e  y6 c. U0 \0 @, NYou can used any other fruits or vegetables that you prefer or in season.

Assemble: * U, H- u+ k' i. I% s' j
Place salad mixture on a serving plate, top with half of the fried chicken strips then drizzle some chilli sauce over the chicken and salad.
. ], w; c( D3 I首先把拌均匀的冷沙拉扑在大盘上, 然后放一般的炸鸡肉条, 接着均匀的淋上些辣椒酱.
+ j3 F, W4 S! e" S! o# ^$ d" QContinue topping the rest of the chicken and drizzle the rest of the sauce around it.
3 D+ Z0 {% n; r$ t' `3 O0 {6 w: A之后继续放上剩余的鸡肉条, 再淋上些辣椒酱.

You might not need all the sauce, so add the amount that you prefer. Or you can serve it as dipping sauce for the chicken strips without the salad. & n& P9 a; f: j
你可以随自己喜好放多或少的酱料, 又或者你也可以用来沾不要淋上去.
