1、五花肉整理干净后放沸水锅中煮约十分钟,其间打去浮沫。

2、五花肉捞出稍晾;葱切成两段;老姜拍破;取甘蔗皮剖成窄条,编成格子状以代替篾笆(我是找不到可以用来垫锅底的东东,只好想出用甘蔗皮代替的办法)。7@5_5z _S'{-HMBd

8、加没过肉块约两指节高的汤或水(约三斤),加盖用大火烧沸,改小火慢烧约一小时。XZvd2t$C!WyK

9、将肉翻面,皮向上续烧约半小时至汤汁将干。

10、改大火收浓汤汁,这时肉块颜色会变得又红又亮。捡出姜葱不要,将肉取出装盘,再浇上锅中剩下的汤汁即成。
